Tackle It Tuesday

Tackle It Tuesday Meme

For "Tackle It Tuesday" I managed to make a large batch of granola, and some ricotta cheese.

Homemade granola is the best, and I love making it. I had gotten a lot of peanuts free, so I decided to put them in my food processor and process them until they turned into peanut butter for my granola.

Well after I finished that I went to my fridge to get the butter out so I could start melting the peanut butter and the butter together. Well... I didn't have any. So since gas is sooo expensive now days, I decided to try my had at making some butter instead. All I did was put some heavy whipping cream in the food processor, and turn it on till it turned to butter and milk. Drain out the milk and then squish the rest of the milk out of the butter. Here are the instructions.

Once I finished making my peanut butter and butter I was ready to make my granola. I got the recipe from The Hillbilly Housewife.

2 tablespoons margarine
1/3 cup natural peanut butter
1/3 cup honey
1/2 teaspoon vanilla
1/4 teaspoon salt
3 cups rolled oats
1/2 cup raisins (optional)

Begin by melting the margarine and peanut butter together in a 3-quart saucepan. Add the honey, vanilla and salt. Stir the mixture until it is smooth and hot throughout. It doesn’t need to boil. Add the oats. Stir until the oats are completely coated with the sticky gooey peanut butter mixture. It will be chunky. Turn the mixture into an ungreased cookie sheet, or a large 9 by 13-inch pan. Spread the granola out evenly and bake it at 375° for 10 minutes. It will be brown and crispy. Now remove it from the oven and allow it to cool right there in the pan. Break it up into pieces after it is cooled. Transfer the granola to a clean coffee can or sealed canister. Add the raisins, if you are using them, when the granola is cool.

Here is my finished product! It is so yummy. I eat it by itself as a snack, in milk as cereal, or in yogurt.

Now when it comes to making ricotta, I am not even going to post pictures! I got the recipe also from the Hillbilly Housewife, but I must have done something wrong. It came out very dry and tasteless. Maybe I just wasn't meant to make cheese.
I also plan on trying to make yogurt and mayo. If I manage I will post some pictures for y'all!

Thanks for stopping by, and make sure to go check out some more "Tackle It Tuesday" posts.

I love granola! I like to sub orange craisins in place of raisins for that little extra taste. yum! I also make them into bars. I'm too lazy to make my own butter though ;)

I love homemade granola but I haven't tried making my own peanut butter. Maybe I'll tackle that sometime.
