Cajun Chicken Pasta




I made my favorite dish tonight! Cajun Chicken Pasta! Yum Yum! Please do not try to do a lowfat version of this recipie. It just doesn't work! Believe me... I have tried. If you know of a secret that I don't please share. I make this only once in a while because of the fat content. However, I do use whole wheat penne pasta, and no one knows because it is drenched with sauce.


Cajun Chicken Pasta


Box of whole wheat penne pasta

3 tablespoons butter

1 tablespoon flour

1 pint of Heavy Whipping Cream

at LEAST 1/2 cup grated parmesan cheese

1 lb chicken breast

Some cajun seasoning

2 cans of diced tomatoes or two chopped fresh tomatoes


Cook and drain pasta according to package.


Melt butter in a sauce pan over medum heat. Add flour and stir in well. Add whipping cream and heat till boiling. Take sauce off heat, and quickly stir in cheese. All cheese should melt and make a yummy sauce! Pour into pasta and mix well.


Cut chicken into bite size pieces and brown. When the chicken is ready add the tomatoes and cook for about half a min just for the tomatoes to heat up.


Pour the chicken and tomatoes into the pasta and mix well.


At this time is when I add Cajun seasoning. You can add some Cayenne pepper also if you so desire. While I add the seasoning I mix it in and taste it. The seasonings can be quite spicy and I need to make sure that it is ok for my kids and picky hubby to eat. Otherwise I end up overdoing the spice I have been told! You can also add however much spice you want to the chicken before cooking it.


I have never wrote a recipie out before, so please let me know if I missed a step, or if something isn't clear. Oh, and look who was sitting in his playpen "helping" me cook!
